Menu Mondays: Feb 24- March 2, 2014- Healthy Eating!

What a week! My whole family seems to be in such horrible moods, couldn't be because the winter has been so long, cold and bitter!  

 At least the sun has been out for the most part these last few days, that never fails to place a smile on my face!!

In that vein, like it or not, we are going to eat healthier!! I think when you get the proper nutrition your body just responds and your mood lightens. Not being bogged down with artificial flavors, dyes, or sweeteners is a step in the right direction too. 

Eventually the Family's attitude
will improve 
because of eating better...

Breakfast Options:
Baked Oatmeal Cake, Breakfast Cookies, Pancakes, Stir-ins Oatmeal, Eggs of choice, Fresh Fruit, *The Ultimate Meal Smoothies, Green or Red Juice (homemade), Milk (One day we will get raw!!), English Muffins, Bagels w/cream cheese, Cold Cereal (very hard to find whole foods cereal- this will be the hardest transition!!)

Lunch Time Offerings:
  1. Grilled Cheese Sammies w/Homemade Tomato Soup
  2. Chicken Bites w/Honey Mustard & Triskets crackers
  3. Munchies- Raw Veggie Plate w/ Cheese Chunks, Hummus, Fresh Fruits, Hard Cooked Eggs, and Triskets
  4. Falafels served on a bed of greens w/chopped grape tomatoes, sliced red onions, feta cheese in Homemade Pitas with Tzatziki Sauce and Chopped Side Salad.
  5. Mixed Super Food Dark Greens Salad w/sliced almonds, grape tomatoes, cucumbers, Feta Cheese, Pickled Cauliflower,  & sprouts
  6. Tabule w/roasted chicken pieces and fresh greens
  7. Orzo pasta w/ artichoke hearts, capers, asparagus, roasted garbanzo beans, feta cheese, and fresh lemon tahini dressing
  8. When time is tight might substitute for the *Ultimate Meal Smoothies

Ratatouille W/ Parmesan Herbed Couscous, Mixed Baby Greens Salad and fresh homemade Strawberry Balsamic Vinegar & Spanish Extra Virgin Oil Vinaigrette

Pot Roast with Onion & Mushroom Gravy, Smashed  Potatoes, and mixed baby green salad 

Italian Dressing Marinated Grilled Chicken w/sauteed mushrooms, Caramelized Onions, Sun Dried Tomatoes, and Capers in a butter Lemon sauce served with Capellini pasta and Chopped side salad

Fish Friday:
Crab Stuffed Flounder w/Greek Orzo Salad and Grilled Fresh Pineapple spears

Left Over Buffet

Crustless Spinach and Mushroom Quiche w/Shredded Baby Swiss served with a Mixed Baby Green Salad tossed in a Red Wine Vinaigrette. For Dessert-Black Bean Brownies Frosted with All Natural Creamy Peanut Butter.

Snackie Treats:
Fresh Pineapple Spears, Smoothies {this is where I hide the veggies:-), Spirulina Smoothies. Apples, Pears, Bananas, Red Grapes, Homemade Protein Bars, Peanut Butter "cookies", Carrots and Dippings, Cheese Chuncks & Triskets, Hummus, Greek Yogurt, Applesauce, Cottage Cheese.
