Menu Mondays: June 3-June 9, 2013

I am going to have to find a new opening line, since "IT has been ages since I wrote..." is getting monotonous! 

So I am posting this week and hope to plan more menus, because the more I don't plan the menus the more we eat out and spend more money on less satisfying and less nutritious food.

BREAKFAST OPTIONS:
Granola, Keiffer Smoothies, Fruit, Pancakes, Toast Points, Cold Cereal, Waffles, Egg of Choice, Yogurt

LUNCH CHOICES:
  • Peanut Butter & Honey On Whole Wheat w/Carrot Sticks & Dippings
  • Black Bean Burgers w/Tahini Sauce,Veggie Chips, & Cottage Cheese
  • Chicken Nuggets w/Honey Mustard Sauce, Veggie Chips w/Hummus, Fruit Medley
  • Falafel w/Tzatziki Sauce on Pita w/pickled Onions, Tomatoes, & Feta Cheese served w/Beet Slices, toasted pita crisps, Fruit, & Yogurt
  • Ham & Baby Swiss Montecrisco Sammies w/Carrot Sticks & Fruit
  • Supper Left over of Choice  


Supper Offerings:

ONLY NO grapes!!
MONDAY
Slow cooker Brown Sugar Pork
Bacon glazed Green Beans
Brown Rice
Spinach Salad with Toasted almonds and vinaigrette

Zucchini Ribbon Salad
TUESDAY
Pan seared Swai Fish
Fruit Medley



Wednesday:
Chicken & Veggie Stir fry over fried Rice (utilizing left overs from Monday!)
Romane Hearts with grape tomatoes & blue cheese Salad


Sundried Tomatoes w/Crimini Mushrooms and Capers!!
Thursday:
 Sundried Tomatoes w/Crimini Mushrooms and Capers Carbonara
over Veggie Pasta (love this pasta made w/veggies!)
Spinach Salad

Friday:
Grilled Italian Marinated Chicken Breasts
Roasted Red Potatoes and Marinated Vegetable Medley
Spinach Salad with toasted Almonds, feta cheese, and pickled onions

Saturday:
Salisbury Steak smothered in Onion Gravy
Egg Noodles
Buttered corn

SNACKY TREATS:
Fruit Leathers, Yogurt, Apple Slices, Orange Segments, Hummus, Veggie Chips, Cheese Plate, Pepperoni & Mozzarella Sticks, Triskets, Cottage Cheese, Carrot Sticks, 5 Mini Marshmallows and 12 carob chips on 2 Graham Cracker Squares,  Apple Slices smothered w/peanut butter and sprinkled w/carob chips, Banana, Strawberries, Melon wedges, homemade strawberry fruit roll-ups
