Budget Friendly Easy & Quick Family Meals: Sept 22-28,2014

My daughter and husband are going camping with her American Heritage Girls Troop this weekend, they will have a great time and it will also mean mommy and son time too! 


The menu will reflect those 2 not eating dinner on Friday but a small meal with my son and a side dish for the "Cracker Barrel" style meal they will be eating. Saturday's plans are equally exciting as we are going to a "SIT-IN" movie theater at my bestie's house, so simple side dish and dessert to share there too! 

I am looking forward to all this FUN this weekend!! Funny as I am typing the menu I see a pattern... LOL!! Someone is CRAVING Mediterranean food!!

 

Breakfast Options:

Whole Grain Waffles w/Pure Maple Syrup, Caramelized Pumpkin Sticky Buns, Eggs of choice, Whole Grain Toast w/organic nut butter, Hot Oatmeal, Yogurt Parfaits with blueberries/strawberries, Or, Smoothies

Lunch Time Selections:
PB&J w/Carrot & Dippings, Munchies: Cheese, Crackers, Turkey, & Grapes, Toasted Cheese Sammies w/Humus and Veggies
Left-Overs, Felafels on homemade Pitas w/Tahini Sauce & Humus w/Veggies, Egg Salad on Toasted Whole Grain w/Veggie Chips & Cottage Cheese.

Dinner Selections:


 Monday:
Crunchy Coated Moist Chicken Breasts, Cauliflower Rice, Steamed Broccoli, and Lemon Jello w/real whipped cream




Tuesday:
Crock pot Gyros on Homemade Pitas, Tzatziki Sauce, Romaine Lettuce and Tomatoes, Quinoa Salad, and Romaine Lettuce and Chopped Veggie Salad


Wednesday:
Quinoa Burgers, Tahini Sauce/Tzatziki Sauce on whole wheat buns, Baked "Fries" and veggies




Thursday:
Chicken Paprikash, Homemade Halushka Noodles, Chopped Veggie Salad.


Friday:
Breakfast for Dinner! Toast, Bacon, & Eggs of choice (Make Snack for Soccer Team & Side Dish for Campers: Pasta Salad)

Saturday
Cook-OUT...:-) Bring a side dish to share (Pasta Salad & Dessert...Brownies perhaps?)

Sunday:
Seared Huli Huli Chicken, Brown Rice, Corn on the Cob and if any leftover veggies in salad.



Snacks:
Hard Cooked Eggs, Cut Up Raw Veggies, string Cheese, Veggie Chips, Fruit, Granola Bars, Nuts, Seeds, Cottage Cheese, Yogurt, Homemade Puddings & Jellos


Drinks:
