Cajun Chicken

Cajun Blackened Chicken

  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoons oregano leaves
  • 1/2 teaspoons ground thyme
  • 1/2 teaspoons ground cayenne (red pepper)
  • 1/2 teaspoons black pepper
  • 1/4 teaspoons salt
  • 4 boneless skinless chicken breasts, 4 ounces each Or 4 Split Chicken Breasts
  • 2 tablespoons Extra Virgin Olive Oil

Directions

  • In small bowl combine onion powder, garlic powder and spices & mix w/2T EVOO. Set aside.
  • Preheat grill to medium-high.{or turn oven to 350}
  • Lightly coat both sides of chicken breast with cooking spray.{Or omit and brush chicken w/herb & EVOO mixture}
  • Sprinkle seasoning mix over both sides of chicken.
  • Brush grill grates with oil. Place chicken on grill and cook until juices run clear when poked with fork, about 6 - 8 minutes per side. {Or line baking sheet with foil and spray cooking spray/ omit foil and spray & just use parchment paper and BAKE FOR30 for bscb or 60 Min for split chicken breasts}
