My SIL is having major surgery in about 2 weeks, and I want to make her a few meals so her family won't have to think about dinner the first few days. Plus my freezer stash is down to a few meals from my major cooking session in June, so it is time for another Batch Cooking Session!
Last session I made a CRAZY amount of food plus the kind folks at my church brought me meals for a few weeks, & it has thankfully, lasted me a fairly long time.
As is the normal, I am going to be making these meals in sessions according to protein type so as to avoid any cross-contamination plus make is easier with the little ones running around! I will attempt to make these in 3 days time max each protein group, the
BSCB will take the longest since each chicken has to be pounded thin and dredged then fried. I really like the way these types of meals turned out; with partially cooking, then freezing, and finishing in the oven the texture and taste don't suffer at all. Honestly it was just as fresh as it was 6 months ago when I made it as it was last week when I had one of the dishes prepared this way!
I will make Italian Wedding Soup w/Homemade Artisan Bread, Chicken Scampi, Chicken Lasagna, Cabbage Rolls, & Breakfast Burritos for my sister in law as she will have 6 weeks recovery. Her hubby is amazing he cooks, cleans, and fixes everything! He even finishes home projects, is great with money, can cook a turkey, Does WINDOWS, washes clothes, dishes, floors, build a deck, does auto-body repair... the only thing I think he can't do is fly!... EVEN so everyone needs a little help every now and then so I thought I would make dishes the whole family would love and give him a break with cooking so he can concentrate on giving my SIL much needed TLC!

Shopping List: 2- 4Lb Chicken Roasters, 2 Lbs Frozen Sweet Corn, 2- oz Peas, 32 Oz Button Mushrooms, 2 Pt Whipping Cream, 3 Onions, 2 Head Garlic, Celery, 1 Lb Carrots, 2 Boxes of Chicken Stock, Sweet Marsala Wine, Lasagna Noodles, 1 T-Tomato Paste, 16 oz-Ricotta Cheese, Mozzarella, Parmigiano-Reggiano Cheese, 1/2 Lb Bacon, 2 Lemons, 16 oz Escarole, 16 Acini Di Pepe.
Beef:
All of these meals will require minimal prep, mix seasonings with stock and dump into freezer bags. Then on cooking day I will take thawed meats and dry well w/paper towel and sear in very HOT pan. Finish cooking in the crock pot with new sauce or I will take drained marinade and boil on the stove top for 20 min then add to crock along with meat.
